Our Story

My name is Frank Yang. My wife Jennifer and I are absolute Matsutake fanatics. We have tasted Matsutake from almost every producing region around the world.

My family has been in the Matsutake sourcing business since I was in the 5th grade, giving me professional expertise in grading and identifying top-quality mushrooms.

After moving to California, our greatest surprise was discovering the best and most aromatic Matsutake in the world right in the forests of Oregon. It has low water content and a firm texture. One bite, and the intense aroma goes straight to your head.

To get my hands on these fresh Matsutake, I drive back and forth between San Francisco and Oregon multiple times every year.

Unfortunately, fresh Matsutake can only be enjoyed for a short two months each year. That’s why, starting the year before last, we began researching ways to preserve this deliciousness so our friends could enjoy this ultimate delicacy at our home year-round.

This year, we finally locked in this exquisite flavor using -30°C (-22°F) blast freezing, allowing us to share it with more people—specifically, people who truly know their ingredients.

This is not my main profession, and I don’t want to treat it just as a business. What makes my wife and me most proud is that our names are on this premium product.

It is our greatest honor and pride to represent nature’s finest food, which is exactly what drives us to prepare this product so carefully.

When you receive this product, please treat this gift from nature with care. I guarantee that if you cook it seriously, and if it is your first time tasting our Matsutake, it will be an unforgettable experience for the rest of your life.

In the kitchen

Seared in butter or avocado oil, it carries its fat-soluble aroma into the dish and can take the rich centerpiece role on a menu — a plant-based alternative to the wagyu course.
